Beta vulgaris
As recommended in Dr. Weaver’s Heirloom Vegetable Gardening, this classic heirloom dating from the 1600s is one of the finest beets for culinary use. The long, carrot-shaped roots are covered with black, bark-like skin which makes the beet extra-winter hardy. The flesh is bright red with rich flavor and the “mulberry” purple leaves make stunning salad greens.
