Edible Cosmos or Salad Cosmos
Cosmos caudatus
This unusual species of cosmos originated in Latin America where it is known by a wide variety of local names. It is also popular as a salad green in parts of Asia, especially Malaysia and Indonesia. Plants grow 4 to 6 feet tall with bushy, fern-like leaves that are truly delicious in summer salads. The flowers are pink, small, and just as edible as the leaves. Since it thrives in hot weather, this is a “must grow” for the summer kitchen garden. Minimum 25 seeds. Germination 97%.
