Cypriot Bliton or “Vlita” (Amaranthus lividus)
This is the indigenous wild harvest amaranth popular in traditional Cypriot cookery for at least a thousand years. Archaeology has confirmed its presence on the island since the Bronze Age, so we can be sure this one is a true heirloom! The young plants are tinged with purple, especially the undersides of the leaves, but when fully mature the plant turns bright green. Growing 6 to 8 feet tall when planted in rich loam, each plant will yield an abundance of greens all summer. A perfect crop for hot, dry locations in the blasting sun because it is also very drought resistant. Cook the greens like spinach. The black seeds can be ground to make gluten-free flour.
