The rare ayote squash not only claims a thousand-year-old ancient Mayan heritage, but its most distinctive characteristic is the color of its flesh, which is olive green. When cooked the green color intensifies and darkens. The flavor is rich, nutty, yet with a hint of apricot fruitiness. The vines reach about 8 to 10 feet in length but can be trained on trellises or wire supports. The pear- shaped fruit varies from 2 ½ to 4 pounds. The squash is ripe when the skin turns pink.
